Collage Camp Menu

I’ve been thinking about the Collage Camp menu for a bit now.  Have one maybe two people coming that are gluten free and really only a few signed up so it is a significant percentage so I am thinking in terms of that as well.  Delicious of course is a requirement.  So here goes.

Friday Night Roll Your Own

Asian flair salad with mandarins and almonds
Miso soup
Nori rolls white or brown sushi rice,

carrots*, avocado, cucumber*, red and yellow peppers, asparagus, shitake mushrooms, sesame seeds,
wasabi, ginger w.f tamari

Melon for dessert

Saturday

Breakfast
Corn, Chanterelle and St. Andre cheese frittata (thin sliced potato base)
or steel cut oats
bagels & cr. cheese

Lunch
Black bean chili con queso
Corn on the cob
tortilla chips
guacamole if we didn’t eat all the avocados last night

Dinner
Buckwheat crepes with either roasted tomato goat cheese or black trumpet mushroom ricotta (my usual ravioli filling) & sage butter
Salad
Bread and Butter

Vegan Chocolate Cake

Sunday

Breakfast
Ginger Walnut Buckwheat Pancakes
or steel cut oats
bagels & cr. cheese

Lunch
Hearty vegetable soup with bread
salad

Provided Drinks for the weekend: Water, Honey sweetened lemonade, tea & coffee

Best Popcorn Ever

Make popcorn on the stove or with an air popper if you are one of those people. By the way did you know that microwave popcorn isn’t any different? and you can use any paper bag? I have found the bags from Chinese food are best because they are thicker.

Topping
Melt more butter than necessary
add 1 tsp zatar*
add 1/2 tsp garlic salt
add a hand full of sesame seeds
more salt

pour over hot popcorn
add a handfull of brewers (nutritional) yeast

awesome.

*zatar is a combo of thyme sumac salt and sesame seeds. It is kind of hard to find but you can order it. I got mine here, which had good product but an annoying shipping charge structure. Really they are trying to gaff people to ship it the next business day which in my opinion they should regardless.

CT: The light streaming in from the windows like it does in Grand Central Station, looking down on the sea of joyful people, all spinning and surrounded by the music. Dancing at the beginning before it got so crowded and dusty.

This is all the dust in the flash of the photo. Most of this dust took up residence in my eyes, nose and throat making my voice change to whiskey town variety. The above conversation was one octave lower than normal and occurred while I was making pancakes. I had slept late, was still wearing a bathrobe (mom’s) and have knots in the back of my hair that you can’t see here.

I have figured out how to make whole wheat pancakes that do not come out like hockey pucks and am giving you the how to.

Feeds 2 people who are hungry after a big day of dancing.

1C whole wheat flour
2 tsp baking powder
1/2 tsp baking soda
mix
3 eggs (yes three)
a squirt of honey
7/8 C milk
2 Tbl lemon juice

I like to cook them almost plate sized and in a cast iron pan, top with butter and maple syrup. I’m a New Englander so don’t you dare put maple flavored corn syrup on them, ok? OK

Homemade Bread Day

Happy Homemade Bread day.

It is obvious to me what to do to celebrate this day is eat bread and gush about the people in your life that have made you some. First and current is my housemate Adam. When I say “Do you know how to make Pumpernickel Bread?”– he looks in up and informs me that he will make some if I procure some rye flour. I say it is under there and he pulls it out right then and there to get going on it. I took half the loaf to Christopher’s house and yesterday we ate it toasted ala toaster oven with kale and cheddar cheese. Adam is worth celebrating.

Robin makes the best damn potato bread in the entire world.

Rebekah can make croissants and when she did so at the Leverett Coop I made extra efforts to get them.

Lucky Me

Jan the bearer of great quiche I am a pretty lucky today. This gorgeous girl came and braved campus parking to bring lunch for us to share. This wasn’t just any old sandwich in a glad bag, but a phenomenal quiche with fresh basil and Gruyère cheese. After we walked across campus with piper who got a ton of attention. So listen people who are shy and need some attention, get yourself a cute puppy and walk around. Ok it isn’t really you getting the attention but we couldn’t go ten steps without someone wanting to pet the energetic little people magnet.

I have noticed in a bunch of blogs that people are committing to blog everyday for the month of November. Can I just say I noticed something funny about that? Most of the people who are agreeing to this are people who pretty much post every day. Well I want to join in, to support but I’m not sure about agreeing to write everyday. Plus sometimes I like my post and I want it to be first for a little while. So I will commit to not post everyday in November. I am not really off to the best of starts, since I posted yesterday. One day this month though, I promise to restrain myself and not post. I hope that makes you all feel somehow supported.

I am going to dance tonight. I am still so sore from yoga Wednesday that I don’t know how this will be. The funny thing is that the teacher didn’t show up. There were two other women there who said, oh lets just practice together. I was up for that. Let’s do the primary ashtanga series. Oh ok, I haven’t tried that thing in a while, how does it go. Then one of the woman says let’s not skimp on it. It was a fun way to practice. Inspired by someone saying which inversions should we do, oh let’s just do all the ones we can think of but only for five breaths. Only. I think it added up. ouch.
